Best-Ever Key Lime Pie

Authentic taste using ordinary supermarket limes. Tart, creamy, and easy to make.


Instructions

  1. Preheat: Set oven to 375°F.
  2. Make Crust: Combine graham cracker crumbs, brown sugar, and melted butter. Press firmly into the bottom and up sides of a 9-inch deep-dish pie pan. Bake for 10 minutes until lightly browned. Cool on a wire rack.
  3. Lower Temp: Reduce oven temperature to 350°F.
  4. Make Filling: In a large bowl, whisk together sweetened condensed milk, yogurt, lime zest, and lime juice.
  5. Bake: Pour mixture into the warm crust. Bake for 15 minutes. It should be mostly set but wobble slightly in the center.
  6. Chill: Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours.
  7. Topping: Whip the heavy cream and confectioners’ sugar until medium peaks form. Top the pie and garnish with extra zest or lime slices before serving.
